Ingredients:
- 7-8 pieces of hilsa fish
- 2 1/2 cups pulav rice preferably gobindo bhog rice or which is famous in hindi as “amba meher” or look for any short grain flavored rice or basmati
- 1/2 cup ghee
- 7-8 tbs of mustard oil
- 7-8 slit green chillies
- 2 tbs mustard paste
- 1/2 cup of whisked yoghurt
- 1tbs of turmeric
- 7-8 strands of saffron soaked in milk
- 2 bay leaves
- 1 tbs of whole garam masala
- Salt to taste
- 3 tbs sugar
Procedure:
- Soak the rice for at least 30 minutes and drain it
- In a pan add mustard oil and add mustard paste,yoghurt,salt,turmeric,salt and stir properly
- Add the raw fish into it with bit of water
- Lid it on
- See when oil seperates
- Turn off the heat
- In another pan add 3 tbs of ghee
- Add bay leaves,whole garam masala and brown it
- Add the rice fry it with light hand with salt and sugar
- Add 5 cups of water
- Simmer it for 20 minutes
- When parboiled layer the fish and rice and pour some more ghee from side,top it up with slit green chillies
- Lid on and cook it in a low flame for more 10 minutes
- Serve hot
