Eggplant and potato masala


  • 1 egg plant diced
  • 1 large potato diced
  • 1 small onion chopped
  • 3 green chilli slit
  • 1 tsp turmeric powder
  • 3-4 strands of coriander chopped
  • 1 tsp cumin seeds
  • Salt and sugar to taste


  • Heat 2 tbs oil in a pan
  • Add cumin seeds
  • Add green chillies
  • Fry in the potatoes and eggplant
  • Add turmeric
  • Lid on and allow to soften
  • Add tomatoes,salt and sugar
  • Lid on and again allow to soften
  • Add the chopped coriander
  • Move your laddle 
  • Allow 5-7 mimutes standind time

Serve hot with handmade breads or pita with a dash of mayonnaise.
