Doi begun

Ingredients:

  • 1 large eggplant diced into big pieces marinated with salt and turmeric powder
  • 1 large tomato diced
  • 3-4 green chillies slited
  • 2 tbs mustard 
  • 1/2 cup beaten yoghurt
  • Salt to taste
  • 1 tbs whole cumin seeds
  • 1 tbs cumin powder
  • 1 tsp turmeric powder
  • Required mustard oil for cooking
  • 1 large onion grated
  • 2 tbs garlic and ginger paste

Procedure:

  • Add oil in a pan fry the eggpalnts
  • Keep aside
  • Add oil and whole cumin seeds
  • Add the grated onion
  • Add garlic and ginger paste
  • Cook it add in the tomatoes and turmeric powder
  • Cook until soft
  • Add mustard paste
  • Add the yoghurt and simmer for 5 minutes
  • Add the egg plants lid on
  • Cook until done
  • Drizzle some mustard oil from top

Serve with steamed rice
