Ingredients:
- 1 large eggplant diced into big pieces marinated with salt and turmeric powder
- 1 large tomato diced
- 3-4 green chillies slited
- 2 tbs mustard
- 1/2 cup beaten yoghurt
- Salt to taste
- 1 tbs whole cumin seeds
- 1 tbs cumin powder
- 1 tsp turmeric powder
- Required mustard oil for cooking
- 1 large onion grated
- 2 tbs garlic and ginger paste
Procedure:
- Add oil in a pan fry the eggpalnts
- Keep aside
- Add oil and whole cumin seeds
- Add the grated onion
- Add garlic and ginger paste
- Cook it add in the tomatoes and turmeric powder
- Cook until soft
- Add mustard paste
- Add the yoghurt and simmer for 5 minutes
- Add the egg plants lid on
- Cook until done
- Drizzle some mustard oil from top
Serve with steamed rice
