Pathar bangla or mutton spicy curry


  • 500 gms mutton
  • 2 tbs whole cumin
  • 4 tbs whisked yoghurt
  • 2 1/2 tbs roasted cumin powder
  • 3 tbs coriander powder
  • 2 large tomatoes chopped
  • 4 potatoes halved
  • Salt to taste
  • Pinch of sugar
  • 4 (2+2) heaped tbs ginger paste
  • 3 tbs red chilli paste
  • 2 tbs raw papaya paste
  • 1 tbs turmeric powder
  • 4 tbs ghee
  • 1 tbs mustard oil
  • 1 tbs shahi garam masala
  • 2 whole cloves,3 whole cardamom,1 stick of cinnamon grind coarsely
  • 7-8 green chillies slitted


  • Marinate the chicken with 2 tbs yoghurt,2 tbs ginger paste,salt,1 tbs red chilli paste,raw papaya paste
  • Keep it for 2 hours
  • In a deep pan add 2 tbs ghee
  • Fry the potatoes golden brown and take out
  • Add remaining ghee
  • Add the coarsely grounded garam masala
  • Add whole cumin wait till splattering
  • Add tomatoes and remaing spices and ginger
  • Cover and simmer until all cooked
  • See when ghee seperates add bit warm water and again allow ghee to seperate
  • Repeat this procedure again
  • Add the marinated mutton
  • Mix it with the cooked spices
  • Cover it with lid
  • Simmer for at least 20-25 minutes
  • Now add remaining yoghurt and mix it
  • Add salt and the potatoes
  • Drizzle the mustard oil from top
  • Add the slitted green chillies and sprinkle shahi garam masala
  • Again simmer for more 20-25 minutes
  • In between check whether mutton is properly cooked or not

Serve with steamed rice

I’ll suggest not to pressure cook the mutton let it cook with everything and it will leave an unforgettable taste in your mouth 🙂
