Mexican fried rice🍚

If you love rich and flavorful rice then you will definitely love this recipe. As promised before, this is the third item I have prepared on the celebration day- THE BUNNY CAKE, GINGER CHICKEN AND NOW THE MEXICAN FRIED RICE

Type: rice, main course

Cooking Time: 15 minutes

Serve: 6


  • 2 cups rice boiled and cooked in the refrigerator
  • 1 cup sweet corn
  • 2 large eggs
  • 1 cup peas, chopped carrots and green beans
  • 1 tbs chilli flakes
  • 1 tbs garlic chopped
  • 1 tbs ginger chopped
  • 1 tbs paprika powder
  • Salt to taste
  • 2 tbs chilli Vinegar
  • 1 1/2 tbs crushed Black pepper
  • 2 tbs low sodium soya sauce


  • Add oil to the pan
  • Add the chopped ginger and garlic
  • Add the chilli flakes
  • Add the chopped vegetables
  • Now add 2 large eggs
  • Add some salt and fry it
  • Now add rice slowly to it and mix it
  • Add the chilli vinegar
  • Now add the soya sauce,paprika and crushed pepper to it
  • Fry it well
  • Again add some chilli Vinegar and cover it

  1. Try to make the boiled rice one night before and refrigerate it
  2. It will make the rice fluffy not sticky
  3. Chilli Vinegar–just make it also before hand by adding 4 tbs vinegar and 3 chopped green chillies
  4. Chilli Vinegar always enhances the flavor
