Chicken pot pie

A pot pie is actually a deep dish pie, filled with meat or chicken. But many people can use only vegetable filling or any sweet filling also. It can be double layered or single layer. This term is mainly used in North America.

I generally make this dish with its authentic recipe.I first had its frozen version which are easily available in markets. But frozen food is not healthy for you and your kids. Why not make it at home with a minimum effort.

Though you can buy your Puff pastry from market, I like to make it at home from the scratch.

Ingredients for the Puff pastry:

  • 2 cups of all purpose flour
  • 1/2 cup softened butter
  • Iced water
  • 1 tsp salt

Ingredients for the filling:

  • 300 gms chicken diced into large chunky pieces
  • 1 medium sized potato diced into small piece
  • 1 cup diced carrot and peas
  • 2 1/2 tbs all purpose flour
  • 1/2 cup milk
  • 2 tbs butter
  • 2 tbs vegetable oil
  • 1 cup grated cheese (I’ve taken mix of grated cheddar,Mozzarella)
  • 1 tsp chilli flakes

Procedure for Puff pastry:

  • In a bowl add the flour
  • Add the salt
  • Cut the softened butter into cubes and keep on incorporating time to time with teaspoons of chilled water
  • Try not to add excess water
  • Now bind it to a hard dough
  • Make 2 balls as I’m making a double layered pot pie
  • Cover it with a cling film or put in a zip lock bag
  • Refrigerate for 1 hour
  • After 1 hour
  • Dust your station with flour and roll your dough to a 1 cm thin sheet
  • Put it on the pie dish and press it down
  • With you hands cover all the space below the dish and press on the sides
  • Allow it to refrigerate for more 30 minutes

Procedure for the filling:

  • In a heavy bottom pan add some oil and butter
  • Add the chicken
  • Add the potatoes
  • Add the peas and carrot
  • Add the chilli flakes
  • Now add the flour
  • Mix it
  • Add the milk
  • And mix it thoroughly with a laddle and you will get a thik saucy mixture
  • Add some grated cheese to it

Allow it to cool down

Assemble the pie:

  • Preheat the oven to 375F
  • Take out the pie dish
  • Now laddle the filling into the pie dish
  • Now roll the other dough
  • And cover it from top
  • Make a egg wash, by adding 1 egg 1 tsp water and whisk it
  • Now brush the egg wash from top
  • Slit open your pie in the middle to allow the hot steam to escape
  • Bake it for 45 minutes
  • You can see a hard crust from out side but a flaky filling of the pie
  • Allow it to cool down for 10 minutes

  1. Don’t forget to refrigerate your dough
  2. Add cold water spoon by spoon only
  3. After rolling your dough on a pie dish refrigerate it for 30 minutes to avoid shrinking
  4. After baking the pie allow it to cool so that you don’t burn your buds😉😉😉
