Pani puri/Golgappa recipe( puffed roundels dipped in tamarind water) recipe || a famous street food of India

Pani puri is a very famous street food in Indian Subcontinent. Pani is water and puri is puffed, hollow, crisp roundels made with flour.

It is known as pani puri in Mumbai, gol gappa in the northern side, phuchhka in Kolkata.

Its is such a dish that taking its name brings water in the mouth. It is a deep fried hollow crisp roundels in which you fill potato stuffing and dip in tamarind water and munch in.


  • 1/2 cup semolina
  • 2 tbs all purpose flour
  • 1/4 cup hot water
  • 1 pinch of baking soda


  • Add all the in ingredients one by one
  • Add hot water
  • Now wrap the dough with damp cloth
  • Leave it for 1 hour
  • Now remove the cloth
  • Divide the dough into 2 parts
  • Now roll out the dough
  • Take a round cutter and cut into roundels
  • This is the most important step-the air dry
  • Allow the rolled dough to air dry for 2 hours maximum
  • Take the roundel on palm-the dry part facing the palm and not do dry side facing upwards
  • Now in hot oil put one by one roundels in such a way that the not so dry part will face the hot oil and dry part upwards
  • Press the roundels with the laddle and they will rise up
  • Preheat the oven at 310F and when you hear the beep sound, switch off your oven and put all the fried gol gappas or pani puris in the oven
  • After 30 minutes when it is kept warm then put in in a air tight container

Your gol gappas or pani puris are ready

But it will accompany a tangy, spicy potato filling and tamarind water.

For potato filling:

  • In a bowl take 3 boiled potatoes
  • Add salt
  • Add the 3 tbs tamarind water
  • Add black salt
  • Add cumin powder
  • Add the roasted spice( roast chilli flakes, whole cumin and whole coriander and grind it coarsely)
  • Add some coriander leaves and mash them together
  • Add some lime juice

For tamarind water:

  • In a bowl of water soak tamarind for 2 hours
  • Add the roasted spice
  • Add cumin powder
  • Add salt
  • Add some lime juice
  • Add some coriander leaves and after 40 minutes remove them
