Fowl cutlet (chicken) ||kolkata style minced chicken cutlet ||a famous snack to munch into

Cutlets refers to a thin slice of meat/chicken from the leg or breast.This dish is made of such minced chicken often breaded.

You can also make it with fish but in that case you should take a fillet as a whole.

Fowl Cutlet ” is Kolkata famous minced chicken cutlet,which is a famous street food in kolkata.

Type: Snacks

Preparation time: 35-40 minutes

Cooking time: 10-15 minutes

Serve: 4

Ingredients:

  • 1 1/2 lb minced meat (not very fine paste)
  • 1 tbs chopped ginger
  • 1 tbs chopped garlic
  • 2 tbs chopped green chilli (you can change level of spice according to taste)
  • 1 medium onion chopped
  • 3 tbs roasted spices/bhaja masala (link in description)
  • 1/2 lime juice
  • Salt to taste
  • 1 cup chopped coriander leaves
  • 1 tbs cayenne pepper or you can use paprika/red chilli powder
  • 300 gms breadcrumbs
  • 3 eggs beaten

Procedure:

  • Mix all the ingredients except eggs and breadcrumbs
  • Cover and leave for 1 hour
  • Now divide the dough into 6 balls
  • Roll it into the breadcrumbs
  • Flatten into the chopping board
  • Take it and dip into beaten eggs
  • Again roll into the breadcrumbs
  • Flatten again into the board and give that diamond shape
  • Repeat the process to get a nice coated cutlet
  • Refrigerate them for at least 2 hours
  • Now shallow fry them or you can deep fry them
  • Fry them 4mintues a side and then flip and again cook for 4 minutes more

Serve them with some cabin salad and sauce as per your choice.Sprinkle some black salt and some chat masala over it. As we’ve used tomato sauce.

Tips:

  • If you don’t get minced chicken, then take some semi frozen boneless chicken breast and grind them into mince in a mixer grinder
  • Semi frozen will help the chicken to remain a bit coarse
  • Keeping in fridge, make the chicken chilled which help the the cutlet retain its shape easily.
  • You can also make it and freeze it 1 month before hand
  • Always apply little water/oil in your palm before making the cutlet.
  • It will prevent to stick the chicken in your palm.
