Dry spinach curry with eggplants and butternut squash recipe|| Palang shaker ghonto recipe

It is 100% vegeterian recipe and takes very less oil to cook. Known as a versatile leafy vegetable Spinach which is rich in iron and vitamins cooked here in a healthy way to retain most of its benefits.

But whenever your family learn about you are cooking spinach there appetite is just gone. Same happens with my family also.In bengal we call it palang shaker ghonto. GHONTO is a mish mash with vegetables. It is generally served with steamed rice and with a side of dal (lentil soup)๐Ÿ‘‡


So, I have to make a variety with spinach leaves to make my kids be fond of this vegetable. There is a link in description of variety of spinach recipes below.

Type: Curry

Preparation time: 8-10 minutes

Cooking time: 15-20 minutes

Serve: 6

Cooking medium : mustard oil


  • 1 lb/450 gm baby spinach
  • 150 gm diced butternut squash/ you can simply use punpkin
  • 150 gm diced eggplants
  • 1 large potato diced
  • 1 tbs whole seeds- (fenugreek seeds, fennel seeds,onion seeds) mix
  • 1 large tomato diced
  • Salt to taste
  • 1 tbs sugar
  • 2 dried whole red chillies
  • 1 tsp turmeric powder
  • 2-3 green chillies


  • In a pan add 2 tbs mustard oil
  • Fry the eggplants and keep them aside
  • Now add 2 dried red chillies
  • Add the whole seed mix/ panch phoron
  • Add the potatoes and fry them well
  • Add in the salt and turmeric powder
  • Add the butternut squash and fry with the potatoes
  • Add the green chillies and diced tomatoes
  • Mix them well and now add the chopped baby spinach
  • Mix the leaves well and cover and cook for 15 minutes on a medium flame
  • Remove the lid and add the fries eggplants
  • Dry out the excess water
