Chicken fajita recipe||minimal oil maximum taste

Fajiatas are the perfect weeknight dinner. Minimal prep and minimal cook time means less mess more taste.

For making perfect chicken fajitas, taking chicken breast or chicken thighs is not so important.

This one is personal preference, although my favourite option is chicken thighs. You can’t beat naturally juicy thigh strips in a tortilla wrap.There’s no right or wrong. Charred edges can absolutely be achieved with both cuts.

Many people authentically like to sear the chicken on a cast iron pan. If you do so make sure you have properly seasoned the chicken or it will stick to bottom

I generally love to bake and grill my chicken. It’s hastle free and easy.

Type: main course

Preparation time: 15-20 minutes

Cooking time: 35-40 minutes

Serve : 6

Ingredients:

  • 1 3/4 lb chicken (thigh or breast or both)
  • 1 cup buttermilk (optional)
  • 2 tbs cumin powder
  • 1 tbs chilli flakes
  • 1 whole lime juice
  • 1 tbs ginger garlic paste
  • Salt to taste
  • 1 whole Capsicum diced into long strips
  • 3-4 green chillies chopped (adjust heat according to taste)
  • 2 tsp crushed Black pepper

Procedure:

  • Marinate the chicken with–buttermilk, chilli flakes, lime juice, cumin powder, salt to taste, ginger-garlic paste
  • Refrigerate it for minimum 30 minutes, 2 hours for better result and overnight for best result
  • Preheat the oven at 425F
  • Bake the chickens for 40 minutes and flip half way through
  • Grill for 3 minutes on each side
  • Take out the chicken and allow it to rest for 10 minutes before chopping it into long strips
  • In a deep dish pan add 2 tbs oil
  • Now add the capsicum and green chillies
  • Add the chopped chicken to it
  • Toss it on a medium flame
  • Add some freshly rushed black pepper
  • Your chicken fajitas are ready

Serve this chicken as a filling to tacos, burritos or you can use as a side dish to many rice and noodles

Before serving you can add some chilli and lime on it, side up with some nachos with salsa.

For more colors you can use red and yellow bell peppers
