These are melt in the mouth sweets which are very often made during the festival season in Indian Cuisine.
Traditionally coconut laddus are made from freshly grated coconut and jaggery, as jaggery is recommended as a natural sweetener.
But in this video we’ve show how to make coconut laddus with frozen desiccated coconut, milk, sugar and cardamon.
You can adjust the medium of sweetener according to your taste bud as we’ve shown both the procedures.
Type: Sweet/Dessert
Preparation time: 10-15 minutes
Cooking time: 20-25 minutes
Ingredients:
- 4 cups of grated coconut (fresh or frozen)
- 2 cups of sugar
- 1/2 cup of milk
- 2-3 whole cardamoms
- 1 Bay leaf
- 1 tbs ghee/ clarified butter
Procedure:
- In a deep dish pan add 1 tbs ghee or clarified butter
- Add in the cardamoms and bay leaf, fry it until aroma comes
- Add the coconut
- Fry them until a sweet aroma comes and it becomes free fall, just be careful it does not get burnt from under
- Now keep it aside
- In that very pan, add 2 cups of sugar
- Add 1/2 cup of milk
- Allow it to dissolve and bubble up
- Form a syrupy consistency
- In that syrup add the grated coconut
- Mix it well until the coconut has softened
- Dish out the mixture
- For making the laddus don’t allow it to cool down much or the laddus will not be formed
- Take small roundels and start giving it the shape
- After all the laddus are made allow it to cool and rest fir at least 2 hours
- It will take a firm shape
