Carrot cake with cream cheese frosting||quick and easy

Hey, readers I just thought to slide in this most comfy recipe of carrot cake this festive season.

This is perfectly moist and creamy cake with that earthy flavour of cinnanom in it. When you bite into this cake you will get an even crunch of pecans and healthy carrots.

Its plain and simple and just need no introduction when comes to a plate.

Preparation time: 15-20 minutes

Cooking time: 25-30 minutes

Ingredients:.

  • 2 cups of grated carrots
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 cup sugar
  • 3/4 th cup light brown sugar
  • 3/4 th cup white oil or canola oil
  • 1 tsp cinnamon powder
  • 3 large eggs
  • 1.5 tsp vanilla essence
  • 1 cup roasted and chopped pecans

For frosting:

Procedure:

  • In a bowl whisk 3 egss u til frothy and add 3/4 cup oil and 1 tsp vanilla essence
  • Beat well and add 1/2 cup sugar and 3/4th cup light brown sugar
  • Mix well and keep aside
  • In another bowl mix 2 tsp baking powder and 1 tsp cinnamon powder with 2 cups of all purpose flour
  • Seive in and add 2 cups of grated carrots
  • Mix with spoon until all the carrots are well coated
  • Now add 1/2 cup of chopped pecans to the liquid mixture
  • To the liquid mixture add the dry ingredients and fold in
  • Divide the batter into 2 equal 8″ pans and bake at 350F preheated oven for 20-25 minutes or until cooked
  • Actually different ovens take different times to cook
  • But after 25 minutes you must put a skewer and see if it comes clean and if not give another 5 minutes
  • Cool down the cake for at least 30 minutes
  • In between make the creme cheese frosting

  • Now take one layer or cake and spread the frosting evenly
  • And add another layer
  • Again spread the the frosting and cover all the sides
  • Now take rest of the chopped pecans and cover the sides
  • We’ve taken 2 scoops of frosting separately in two bowls and added orange food color in one and green food colour in another
  • Piped out these colors to give the final look and feel of the carrot cake
