Basanti means yellow and Pulao is aromatic rice cooked with dry fruits.
Basanti Pulao is a Bengali rice delicacy and is very commonly cooked during pujas,festivals and special occasions.
It is mainly made with short grain rice, preferably Gobindobhog but those who live abroad like me can go for Kali jeera rice, jeera samba. It washed well,soaked and generously mixed with Ghee/clarified butter and made aromatic with nuts, spices and made yellow with turmeric powder or you can make it rich with saffron water.
From my kitchen to your kitchen,let’s cook BASANTI PULAO;
Type: Main Course
Preparation time: 25-30 minutes
Cooking time: 15-20 minutes
Ingredients:
- 1 lb short grain rice ( around 500gm)
- 1 tsp turmeric powder
- Salt to taste
- 1.5 tsp chopped ginger
- 3-4 bay leaves
- Whole garam masala-3-4 cardamom seeds+4-6 cloves+1/2 inch cinnamon sticks
- 1/4 th cup ghee/clarified butter
- 1/4 th cup raisins
- 70 gm sugar
- 2-3 slit green chillies
Procedure:
- First wash the rice very well,until the water runs clear
- Then soak the rice for 30 minutes
- Drain the water
- Then on a soaking paper
- Spread the rice to drain excess water
- Grind the whole garam masala
- In a bowl add all the rice
- Add the chopped ginger,bay leaves and the whole garam masala
- Add the turmeric powder and the clarified butter
- Mix them altogether and keep it covered for 1 hour
- After 1 hour in a pan add 3 tbs oil
- Add the raisins and fry,if you want you can add cashew also
- When the raisins are plumped add the rice
- Fry the rice until it turns from translucent to opaque
- In between add almost 1000-1050ml of boiling water
- Cover and cook for 10 minutes at a lowest flame
- After 10 minutes uncover it and scoop the rice from bottom to top very carefully
- Add almost 70 gm sugar to the rice and mix
- At this point add salt to taste and gr the n chillies,mix and again cover
- Cook for more 10-15 minutes at a lowest flame
- And its done
