Caramel pudding is a caramel flan steamed with a milk based item which is served as a dessert.
We had it as our dessert last night after a heavy meal.You can make it with or without the oven. I have made it without the oven and have shared this recipe below.
Ingredients:
- 3 large eggs
- 2 glass of milk reduced to 1 glass
- 1/2 cup castor sugar
- 1 tsp vanilla essence
For the caramel:
Ingredients:
- 6 tbs sugar
- 3 tbs water
Procedure for the caramel:
- Add the sugar and the water together in a pan
- Cook it in a medium flame
- When to see the bubbles,swirl your pan and take care they the bottom doesn’t burn
- Now when you see that bubbles are changing to a brownish color,then put off the flame
- Pour into that bowl in which you will make rest of the pudding
- Now swirl your bowl so that the caramel evenly spreads at the bottom
- Keep aside to set

Procedure for the pudding:
- In a bowl take 3 eggs
- Whisk them properly
- Now add the sugar and evenly blend them together
- Add the vanilla essence
- Add the reduced milk
- Now blend them well
- Take a strainer and pour the milk through it over the set caramel
- Cover the bowl by aluminum foil

How to steam your pudding
- Take a deep dish pan
- Take 3-4 kitchen towel
- Place them at the bottom
- Now place your pudding bowl
- Pour some boiling water in the pan,not on the bowl
- Cover with lid
- Simmer for 25-30 minutes
- Check in between with a skewer and see if it comes clean
- Now slowly take out the bowl
- You can see it is set and if you see some brownish color on the top don’t panic it is only the caramel seeping through
- And set it in the fridge for at least 2 hours
- Now take a plate and place it on the top of the bowl
- Turn the bowl and plate upside down together
You will get very “caramel pudding”
