Aloo bhaja+Begun bhaja/Eggplant fries and julienne cut potato fries||All time favorite comfort food with a side of rice and daal on its side

Bengali style aloo bhaja( julienne cut potato fries) and Bengalis style begun bhaja (ring cut eggplant fries) are very famous side dish for a authentic lunch or dinner menu.

In Bengal if you invite somebody for Bengali style lunch or dinner then the menus generally becomes first serve Basmati rice (steamed) with Bengali style aloo bhaja( julienne cut potato fries) and Bengalis style begun bhaja (ring cut eggplant fries) ,then comes any veg curry,fish curry and Bengali Mangsher Jhol,and ends up with sweets

In general also when people become stressed up with cooking,then simple lentil soup, potato and eggplant fries with a side of key lime just means a lot!!!!

It goes well also in breakfast with Luchi( deep fried puffed bread) or Rotis or parathas

Let’s fry some julienne cut potato and eggplant fries πŸ‘‡πŸ‘‡πŸ‘‡πŸ‘‡

Type: Fries

Preparation time- 10-15 minutes

Cooking time- 15-20 minutes

Ingredients for julienne cut potato fries:

  • 2-3 large potatoes julienne cut
  • 1 tsp turmeric powder
  • 1 tsp salt
  • Mustard oil for frying (preferably) Or any cooking oil
  • 1 tsp onion seeds
  • 2-3 green chillies
  • 2 whole red chilli

Ingredients for eggplant fry:

  • 1 eggplant cut into rings
  • 1 tsp turmeric powder
  • 1 tsp salt
  • Mustard oil for frying (preferably) Or any other cooking oil

Procedure for frying eggplant:

  • Take a medium sized eggplant and cut in rings
  • Add 1 tsp turmeric powder+1 tsp salt on both sides of the eggplant
  • Heat pan and add 3 tbs of oil
  • Heat up well then add the eggplants and fry until dark golden brown and crisp on both sides and take it out on a paper towel
  • Sprinkle some sugar,on them
  • It will add an extra taste to this eggplants fries

Procedure for frying julienne cut potatoes:

  • In another pan add 3 tbs oil and heat up
  • Add 1 tsp onion seeds and 2 red chilli whole and 2-3 green chillies
  • Saute them until aroma comes
  • Add 1 tsp turmeric powder and 1 tsp salt to the potatoes
  • Add it to the pan
  • Allow them to settle for 2-4 minutes and then flip
  • Fry them until golden brown and crisp
  • And its done
