Chom Chom/ a sweet delicacy made from fresh cottage cheese|| A classic Bengali sweet

Chom Chom/Chum Chum is a classic sweet dessert of Bengal. This recipe is similar to that of Rosogolla.

It is a very simple to prepare but it takes time,all you need is patience and just keep checking on intervals….

It is simply made of Chhana/chhena or cottage cheese,semolina and bit of baking powder. It cooks in sugar syrup until you get the deserved color. It takes almost 3 hours to cook and the main trick is adding hot water in intervals.

Type- Sweets, Dessert

Preparation time- 15-20 minutes

Cooking time- 3 hours

Ingredients:

  • 1 lb fresh cottage cheese/ chhana/chhena
  • 2 tbs semolina/sooji/rava
  • 1/2 tsp baking powder
  • 2 1/2 cup sugar
  • 4 cups+1 cup+1cup+1 cup water

Procedure:

  • In a flat plate take 1 lb fresh cottage cheese/ Chhana/chhena and start kneading it
  • Add 2 tbs semolina/sooji/rava
  • Add 1/2 tsp baking powder
  • Knead until everything is together,there is no cracks and you got a soft dough
  • Kneading will take around 6-8 minutes
  • Take small roundels and make them in the shape of logs
  • In between you can start making the syrup
  • In a pan add 4 cups water and 2 1/2 cup sugar
  • Mix until it dissolves
  • Now bring the syrup to boil
  • Add the cheese logs/chhana into the syrup
  • Cook it covered for 20 minutes on a high flame
  • After 20 minutes make your flame medium low
  • And keep on cooking for 1 hour
  • After 1 hour remove the cover and add 1 cup hot water and again cover and cook for another 1 hour
  • Again after 1 hour add 1 cup hot water
  • And keep on cooking it covered and on medium low flame
  • Again after 1 hour add 1 cup hot water and keep on cooking it on medium low flame
  • So for every 1 hour add 1 cup hot water for 3 hours and its done
  • Always keep an eye that your sweets don’t get burnt from below or the syrup thickens and becomes sticky
  • You can use the syrup or can discard it
  • You can add mawa or khoya (reduced milk into solids) for garnishing
