Strawberry Short Cake||fresh fruity light cake perfect for parties||Healthy and tasty|| kids special

To me “there is nothing better than cake but more cake”…..I’m just a cake person and baking is my passion.

Tried so many cakes in my blog,but this strawberry short cake is my favourite of all. It has a light whipped cream filling stuffed with strawberries sandwiched by 2 layers of thin but soft cakes.

We can make from scratch,with very few ingredients. It so easy to make that it will be prepared quickly in no time and no effort and you’ll feel that “all you made is love”.

When I pack my winter clothes I know strawberry season is there.

So,let’s make Strawberry Short Cake… my style πŸ‘‡πŸ‘‡πŸ‘‡

Type- Cake

Preparation time- 15-20 minutes

Cooking time- 20-22 minutes+ 12-15 minutes for decorating

Ingredients:

  • 120 gm all purpose flour ( 1 cup) sifted
  • 120 gm sugar (1/2 cup+2 tbs)
  • 2 egg yolks
  • 4 egg whites
  • 1 tsp baking powder
  • 1 tsp vanilla essence
  • 500 gm whipping cream
  • 2 cups powdered sugar
  • 200 gm fresh strawberries sliced
  • 1/2 cup milk
  • 3 tbs butter

Procedure for baking short cake:

  • In a bowl add 4 egg whites and whisk
  • While whisking add 1/2 cup +2 tbs sugar
  • Beat until everything is creamy
  • In another bowl sift the all purpose flour
  • Add 1 tsp baking powder and mix
  • Now in another bowl add the 2 egg yolks and beat
  • Add 1/2 cup milk and 3 tbs butter and mix
  • Now to this egg yolk mixture add the flour and bring them together
  • In that egg white mixture add,the flour mixture and beat until everything is smooth and it holds the ripple of 8 shape
  • Pour half the batter in a greased 7 inch pan and reserve the batter for another layer,another cake plus we need thin layers
  • Or if you have 2- 7 inch cake tin bake them together
  • Bake the short cake for 20-22 minutes in a preheated oven at 320F or 160C
  • After baking allow the cake to completely cool down
  • Your short cake is ready

See it’s so thin and soft.

Procedure for the strawberry fillings:

  • In a bowl add 500 ml heavy cream
  • Start beating
  • While beating add 2 cups of powdered sugar
  • Keep on beating until soft peaks are formed
  • If you want refrigerate for 30 minutes

Assembling our Strawberry Short Cake πŸ‘‡πŸ‘‡πŸ‘‡

  • Keep the first short cake layer
  • Spread the whipped cream evenly
  • Spread it thick
  • Now place the strawberry slices and cover it up
  • Again spread another layer of whipped cream on the strawberries and evenly spread them
  • Place another layer of short cake
  • Spread evenly another thick layer of whipped cream
  • Now if you want you can refrigerate for 10-15 minutes
  • Now trim on all sides
  • Decorate with some more whipped cream
  • And top it up with some strawberry slices
  • Now cut into pastry shapes and its done
  • Refrigerate for 10-15 minutes and let it set
  • Now enjoy this fresh fruity strawberry shortcake
