Vegetable Chop or Breaded Vegetable Croquettes are a very popular street food of Bengal. And its so addictive that no one can eat just one.
It’s is a Kolkata style vegetable chop that is made with beetroots,carrots,mashed potato with the crunchiness of peanuts in it. In Kolkata there are many random shops that are famous for their rolls, chowmein, mughlai parathas which gets open after 5 p.m…just when the snacking time begins which will definitely have this vegetable chop in their shop along with other breaded croquettes and fritters.
Staying abroad or out of town sometimes we literally crave for these food or snack whatever we can call them,but we don’t get it over there…..but trust your hands and just go to your kitchen and put on your apron,scroll my recipe….if reading is not your thing we always add videos of my recipe… and get started.
So,let’s start today with Kolkata Style Vegetable Chop/ Breaded Vegetable Croquettes….in my style 👇👇👇
Type- Starter
Preparation time- 20-25 minutes
Cooking time- 4-6 minutes each batch
Ingredients:
- 150 gm finely chopped beetroots (not grated)
- 80 gm finely chopped carrots
- 2 medium sized potato boiled and mashed
- 1 tsp panchphoron
- 1 tbs ginger paste
- 1/4 cup peanuts
- Salt to taste
- Sugar 3 tbs (as this fritter is on the sweeter side)
- 1/4 th cup chopped coriander leaves/ cilantro
- For the spice mix– 1tbs coriander seeds+1 tbs cumin seeds+1 tbs fennel seeds+4-5 whole red chillies all are dry roasted,cooled and grind to fine powder
For breading
- 1.5 cups all purpose flour
- 1.5 cups breadcrumbs
- 2 eggs beaten with a pinch of salt
Procedure:
- In a pan add 3 tbs oil
- Add the peanuts fry and keep it aside
- Add 1 tsp panchphoron and fry
- Then add 1 tbs ginger paste and mix
- When aroma starts coming add the chopped beetroots and fry
- Fry for 5-8 minutes on a medium flame or until it softens a little
- Now add the chopped carrots and fry
- Let these veggies to soften
- Add the salt to taste and sugar; remember this breaded fritter will be on the sweeter side
- Add 3 tbs of the spice mix, that we made earlier and incorporate everything very well
- Now add the boiles mashed potatoes and mix; mix until everything comes together
- Add the fried peanuts and chopped coriander leaves and mix
- Let it cool down
- Now take some of the mix and give them small log shape
- It’s time for the breading- take one log roll over all purpose flour,then dip into the egg and then coat with the breadcrumbs
- Now you can double coat it by dipping again into egg and rolling in breadcrumbs
- After the breading is done freeze it for 20-25 minutes
- Take the number of breaded fritter you need and let the remaining in the freezer,you can keep them upto more than 1 month
- Deep fry them until brown
- Drain on kitchen towel and sprinkle some black salt
- Enjoy with some mustard sauce and ketchup
