Lau Chingri/Shrimp with bottle gourd/jhinga lauki|| ideal with steamed rice|| traditional Bengali dish|| no onion no garlic

Lau Chingri or Shrimp with bottle gourd is an quintessential Bengali dish.

It’s has the earthy flavor of cumin and ginger minus onion and garlic. Some people might call it ‘lau ghonto’. This dish is on the sweeter side and it can be made with Chingri/Shrimp/Jhinga or we can use ‘bori’ or dried lentil dumplings. But believe me these shrimps just take this you to the next level of satisfaction.

Let’s make Lau Chingri/Shrimp with bottle gourd/jhinga lauki…in my style ๐Ÿ‘‡๐Ÿ‘‡๐Ÿ‘‡

Type- Side dish

Preparation time- 10-12 minutes

Cooking time- 20-25 minutes

Ingredients:

  • 1 medium sized bottle gourd (Lau/lauki) peeled and cut into small pieces
  • 100 gm shrimp/Chingri
  • Salt to taste
  • 2.5 tbs sugar
  • 1 tsp cumin seeds for tempering
  • 1 tbs ginger paste
  • 2 bay leaves
  • 2 whole red chillies
  • 1 tsp turmeric powder
  • 1 tbs cumin powder
  • 1 tsp garam masala
  • 2-3 green chillies

Procedure:

  • In a bowl add the shrimps/ Chingri add 1 tsp turmeric powder and salt and mix
  • Fry them for 3-4 minutes and keep them aside
  • In that oil add 2 bay leaves,2 whole red chillies and 1 tsp cumin seeds
  • Fry till aroma comes and then add 1 tbs ginger paste and fry
  • Add 1 tsp cumin powder and mix
  • Now add the bottle gourd and mix
  • Add salt and sugar,remember the dish will be on the sweeter side
  • Add 2-3 green chillies
  • Add turmeric powder and keep on frying
  • Cover and cook for 10-12inutes on a medium flame,it will release some water
  • Now uncover and keep on cooking eventually the water will dry up
  • At this point add the fried Shrimps/ Chingri and mix
  • Just check that the bottle gourd is cooked or not
  • It’s done
  • Enjoy with some steamed rice
