Bengali Phulko Luchi means puffed deep fried bread.It is mainly made outof all purpose flour (maida). Luchi (puffed bread) & Dum aloo (aloor dum) is classic Bengali combination. It can also be occupied with many other side dishes whose recipe we’ve already linked below.Traditionally ,Luchi (puffed bread) is deep fried in ghee (clarified butter).We also know that mainly this puffed bread in North India is also known as Poori & it is made of wheat flour whereas Luchi is made of all purpose flour. Whereas luchi has to be made with all purpose flour (maida).If you don’t want to fry them in ghee then deep fry them in oil as we did.Let’s make Luchi (puffed bread),in my style😊Type- Deep fried breadPreparation time- 8-10 Minutes Resting time- 30 minutesCooking time- 2-4 minutesIngredients:
- 200 gm all purpose flour
- 1/2 tsp salt
- 1 tsp sugar
- 2 tbs oil (any oil except mustard oil)
- 1 cup hot water (as we required)
- Oil for deep frying
Procedure:
- In a bowl add the all purpose flour
- Add the salt and the sugar
- Add the white oil
- And mix evenly
- Now add the hot water
- Start kneading
- Knead into a soft dough
- Cover and rest it for 30 minutes
- Now make small balls out of the dough
- Apply a bit of oil or flour,any of it you are comfortable with on the station you will roll
- Flatten it and start rolling
- The process will be roll and rotate-roll and rotate
- No in a hot oil deep fry your breads
- It will be puffy and light
- You can fry it light golden brown or white,the way you like it you can fry
