‘Sandesh‘ is a very popular sweets in Bengal. No festival or occasions goes without having this sandesh on the menu.
Today we made ice cream sandesh or you can say steamed or bhapa sandesh with only 3 ingredients chhena/cottage cheese, whipping cream and condense milk. We have added a twist by adding fresh strawberries to it.
It’s taste is mildly sweet and it is generally served cold. It is my husband’s favorite sweet. What you need more in this scorching summer….a plate with 2 cold ice cream sandesh and a glass of water to enjoy after dinner treat.
It is very easy to make,so let’s make ice cream sandesh/bhapa or steamed sandesh great…..in my style👇👇👇👇

Preparation time- 20-25 minutes
Cooking time- 40-45 minutes
Ingredients:
- 2 litres of full fat milk
- 5 tbs plain white vinegar
- 5 tbs water
- 1 cup condensed milk or you can use 1 cup powdered sugar
- 1 cup heavy whipping cream
- 100 gm fresh strawberries (we froze our strawberries before hand as we had a night batch of it)
Procedure:
- In a bowl mix 5 tbs plain white vinegar and 5 tbs water
- In a saucepan bring to boil,2 litres of full fat milk
- When the milk come to boil mix it slowly with a laddle
- Now add 2-3 tbs of the water+vinegar mix and stir lightly
- Keep on repeating the process until the chhena/cottage cheese gets separated
- Drain the cottage cheese/chhena
- Wash the chhena under running water,to get rid of any vinegar smell
- Keep it hung in a cheesecloth/muslin cloth for 20-25 minutes
- Now take the chhena/cottage cheese on a plate and start kneading
- Knead until it’s soft and creamy (do not add any water
- In another bowl add 1 cup heavy whipping cream and beat it until creamy
- Add 1 cup condensed milk to the heavy cream and whisk
- You can use a blending jar instead of hand blender
- Blend your strawberries to a paste
- Now in that whipping cream and condensed milk mixture add your cottage cheese/chhena and blend
- Blend into a smooth paste
- Add the strawberries mixture
- If you want you can keep it plain without any flavor
- Now line up a baking dish with aluminum foil
- Pour the mixture
- Garnish with some chopped pistachios
- Cover it up with another aluminum foil tightly
- In a large pan add 2 cups of water and allow it to boil
- Place a cookie cutter or any steel stand
- Place your baking dish
- Cover and cook for 20 minutes on a low flame and 20-25 minutes on lowest flame
- In between check for the water if the water dries up add another cup of hot water
- By 40-45 minutes it should be done
- Allow it rest for 10-15 minutes and then refrigerate it for 2-3 hours
- Take it out and now cut the shape you like and enjoy
