Choux pastry eclairs||an unique dessert to try||kids special||perfect for parties and get togethers

Choux pastry,or pate a choux, is a light pastry dough used in many pastries. It contains only butter,after,flour and eggs. Instead of raising agent,it employs high moisture content to create steam during cooking to puff the pastry. The pastry is used in many European and European derived cuisines.

It’s taste very different from any other pastries. It is not a solid pastry it is hollow inside,where you can put your favorite fillings like jam, pudding,whipped cream.

When you will bite into this pastries,it will puff and the filling will burst into your mouth.

It’s an unique dish and a worth to try.

Like myself,who love baking should definitely try this.

Let’s make Choux pastry eclairs with vanilla pudding….in my style 👇👇👇

Ingredients for the pastry

  • 1/2 cup milk
  • 1/2 cup water
  • 1 tsp sugar
  • 1/4 tsp salt
  • 1/2 cup butter
  • 1 cup all purpose flour
  • 4 large eggs
  • A wooden spoon (must)
  • A pastry bag with 1/2 inch round nozzle

Ingredients for the pudding filling:

  • 2 cups of whole milk
  • 4 tbs softened butter
  • 4 egg yolks
  • 3/4th cup sugar
  • 1/4 the cup cornstarch or cornflour
  • 2 tsp vanilla essence
  • 1 pinch of salt

Ingredients for the chocolate coating:

  • 1 cup semi sweet chocolate chips (or sweet or dark chocolate as you like)
  • 3 tbs butter

Procedure for the pudding filling:

  • Bring into boil 2 cups of full fat milk,then turn off the heat and keep it aside
  • In between in a bowl add 3/4th cup sugar,1/4 th cup cornflour and 1 pinch salt and 4 egg yolks
  • Mix it first it will be grainy but and you keep on vigorous mixing it will turn to creamy
  • Now slowly add the hot milk and whisk
  • After mixing transfer the whole mixture into the pan you boiled the milk
  • And cook until it thickens
  • Then take it off the heat and add 1/4 cup (4 tbs) softened butter and 2 tsp vanilla essence and whisk
  • Cover it with a cling film directly onto the pudding,keep it outside the refrigerator for 30 minutes and then put it in the refrigerator for chilling (do not freeze)
  • Pudding filling is done

Procedure for the choux pastry:

  • In a pan add 1/2 cup milk+1/2 cup water on a medium flame
  • Add 1 tsp sugar+1/4th tsp salt
  • Add 1/2 cup butter
  • Use a wooden spoon (must) to stir
  • When you will see it’s bubbling add 1 cup all purpose flour and mix
  • Mix until everything comes together and becomes doughy
  • When it’s done take it off the heat
  • Whisk with beater to cool the heat off
  • Add 4 eggs one at a time and whisk
  • It will become creamy
  • Now put it in piping bag with a 1/2 inch nozzle
  • Pipe it out in a small log shapes
  • Take water on finger and smooth any uneven ends
  • Bake it in a preheated 425F oven for first 10 minutes and then without opening the oven reduce the temperature to 325F and bake for another 30 minutes or until golden crusty brown
  • So choux pastry eclairs also done

Procedure for the chocolate coating:

  • In a bowl add 1 cup chocolate chips
  • Add 3 tbs softened butter
  • Microwave for 30 secs on high power
  • Mix and coating is also ready

Procedure for the choux pastry eclairs with vanilla pudding filling:

  • Take one eclair and make space by using a sharp knife on top
  • Push it inside so that you can make a way for the filling
  • Take the pudding in a piping bag with a pointy nozzle
  • Push the filling inside each eclair
  • Scrape excess filling oozing out of the eclairs
  • Dip the into the melted chocolate and even it from outside
  • Your choux pastry eclairs with vanilla pudding is ready

    1. Ya,there are many people who think eclairs is a very tough recipe and I was one of them too,but believe me it’s not at all tough…what it really needs is your patience and time that’s all😊
