‘Hing er kochuri’ or asfoetida flavored deep fried puffed breads is a very popular dish from Bengali Cuisine.
Sunday and kochuris are both emotion of a Bengali like me. We live outside India and really miss going to a sweet shop and enjoy this ‘kochuris’. So,started making our own and believe me…they turned out really great. And my greatest compliment I got from my husband that,he haven’t tasted ‘kochuris’ this great till date π.
From my kitchen to your kitchen this perfect recipe for hing er kochuri/ asfoetida flavored deep fried puffed breads πππ
Type- Bread
Preparation time- 20-25 minutes
Cooking time- 1-1:30 minutes each batch (when your oil has reached the optimum temperature π‘οΈ)
Ingredients for the filing:
- 1/2 cup sattu/chhatu/parched flour
- 1/4 th cup water knead a soft dough (it may vary from people to people)
- 1.5 tsp salt
- 1.5 tsp hing
- 1 tsp sugar
- 1 tbs bhaja masala/dry roast spice powder
- 1.5 tsp oil
Ingredients for the dough:
- 1 3/4 th cup all purpose flour
- 1 tsp salt
- 1.5 tbs sugar
- 3 tbs oil
- 1/2 cup water (it varies from people to people)
Procedure for the dough:
- In a bowl add 1 3/4 th cups of all purpose flour,1 tsp salt,1.5 tbs sugar
- Mix them
- Then add 3 tbs oil and again give it a quick mix
- Now we need to knead a soft dough by adding water slowly to it
- We required around 1/2 cup water
- Drizzle 1 tsp oil and brush over the dough and keep it aside
Procedure for the filing:
- While our dough is resting,we will knead out our filing
- In a bowl add 1/2 cup chhatu/sattu/parched flour,1.5 tsp salt,1 tsp sugar
- Add 1.5 tsp hing/asfoetida and mix
- We’ll need asfoetida in good amount as it is ‘hing er kochuri’/ asfoetida flavored deep fried puffed breads
- Add 1tbs bhaja masala/dry roast spice powder
- Add 1 tsp oil and mix it evenly
- Now add water spoon by spoon and knead a soft dough
- We required around 1/4 cup water
- And our filing is also ready
How to make ‘Hing er kochuri’ / asfoetida flavored deep fried puffed breads?
- Now both our dough and the filing is ready
- Pinch around 25 gm of the all purpose flour dough and flatten it out by giving it a small bowl shape to hold the filing in the center
- Again pinch around 10 gm of the filing and place it in the center of the all purpose flour roundel and fold it from all side
- Prepare all your roundels with the filing inside
- Now roll out with a rolling pin and deep fry until golden brown
- Your kochuris are ready to enjoy
