Balushahi is also known as Badusha.in North India it is known as Balushahi and the same is known as Badusha in South India.
It is easily available all over India.But currently we’re outside India and my elder son Aaryash has a sweet tooth.I really make a lot of sweet for him at home.Not only I like making it for him and my family, bonus is they are healthy too,as they are homemade.
These are crispy from outside and light,succulent from inside.
To me personally its my “GUILTY PLEASURE” ssshhhh…!!! 🤫
Type: Sweet,Dessert
Preparation time: 15-20 minutes
Cooking time: 20-25 minutes
Ingredients for the sugar syrup:
- 2.5 cups of sugar
- 1.25 cups of water
- 2-3 crushed green
- 1 tsp lime/lemon juice
- 8-10 strands of saffron or 3-4 yellow food color
Ingredients for the dough:
- 2.5 cups of all purpose flour
- 1 tsp baking powder
- 1/2 cup melted butter or clarified butter
- 3/4 th cup water at room temperature 🌡️
Procedure:
For the syrup:
- In a pan add 2.5 cups sugar and 1.25 cups of water and stir
- Add 1 tsp lime juice as it prevents crystallization
- Add 10-12 strands of saffron
- Add 2-3 crushed green cardamom
- Mix until everything is dissolved and bring it to boil
- At the point when you drop the syrup from the spatula,the last drop of the syrup falls the slowest then the right consistency is reached
- Turn off your heat and keep it aside
For the dough:
- In a bowl add 2.5 cups of all purpose flour
- Add 1 tsp baking powder and mix
- Sift it together
- Add 1/2 cup of melted butter or clarified butter
- Start kneading
- Kneading should not be too firm or too soft
- Just try to put it together
- We’ve used almost 3/4th cup of water
- Give it a 30 minutes rest
- Take out small rounders and flatten it and make a hole in the middle
- In a deep dish pan add oil
- Oil should be that much that the doughs should sink
- The heat should be that much that it will sink at the bottom and slowly float and get cooked as well
- Fry until golden brown
- Now take then out and dunk directly to a semi warm sugar syrup for 6-8 minutes
- Flip halfway after 3-4 minutes
- Allow them to cool and decorated with some pistachios and silver leaf or just simply add some chopped almonds
