Chicken A la keiv-2 ways – classic pocket style and roulade style

Chicken a la keiv ,is also called Chicken kyiv or just Keiv,is a dish made of chicken fillet pounded and rolled around cold herb butter,then coated wheaten the eggs and breadcrumbs and either fried or baked. In gener,the dish of stuffed chicken breast is also known in Ukrainian and Russian cuisines as Colette de Volaille .

In different restaurants it has different forms,like some a la keivs ar just chicken breast made pockets and stuffed with cold herb butter or sometimes pounded and then rolled known as Roulade.

Type- Main course

Preparation time- 20-25 minutes

Cooking time- 8-10 minutes each batch when optimum temperature reached

Ingredients for the herb butter:

  • 1/2 cup softened butter
  • Salt to taste
  • 1 tbs mixed herbs
  • 1 tbs black pepper powder
  • 1 tbs chopped garlic
  • Juice of 1/2 lime
  • 1/4 th cup chopped parsley

Ingredients for the a la keiv:

  • 1/2 cup herb butter
  • 5 chicken breast cut into halves (half of which is flattened and half of which is made pockets)
  • 1/2 cup grated cheese
  • 1 cup flour for rolling the chicken
  • 3 eggs beaten
  • 1 cup breadcrumbs (preferably Panko breadcrumbs)
  • Oil to deep fry

Procedure to make herb butter:

  • In a bowl take 1/2 cup softened butter
  • In that bowl add 1/4th cup chopped parsley
  • Add salt to taste
  • Add juice of 1/2 lime
  • Add 1 tbs chopped garlic
  • Add 1 tbs black pepper powder
  • Add 1 tbs mixed herbs
  • Now mix and refrigerate for 10 minutes

Process for the classic pocket style a la keiv:

  • Take a breast piece chicken then carefully slice it
  • Then take one piece and slice in the middle to make pocket
  • In that pocket slide the herb butter and 1 tbs grated cheese
  • Seal it with fingers
  • Then roll over the all purpose flour
  • Dip into eggs
  • Coat it with breadcrumbs
  • Chill in the freezer for 1-2 hours
  • Then deep fry on a medium low flame to medium flame until golden brown
  • And its done

Process for the Roulade:

  • Take a breast piece and flatten it
  • Place the herb butter and 1 tbs grated cheese and roll it
  • Then roll over the all purpose flour
  • Then dip into the egg
  • Roll it on the breadcrumbs
  • Chill it in the freezer for 1-2 hours
  • Deep fry them on a medium low flame to medium flame until crisp golden brown and its done
